This premium product, harvested at peak fat content and Ike Jime sacrificed (a humane and traditional Japanese method of killing fish to maintain the quality of its meat), is immediately super frozen to -70°C, preserving its freshness and organoleptic properties. This is visibly demonstrated through the temporary contraction of the meat upon defrosting, akin to rigor mortis.
