This ramen broth base, known as paitan soup base, is Tonkotsu style and flavored with sweet soy milk and garlic. This is a broth with no animal ingredients. Original traditional tonkotsu ramen broth is a deliciously creamy pork bone broth, traditionally served with long thin noodles and other ingredients.
“Ton” means pork and ‘kotsu’ means bone. Pork bones are cooked for long hours over high heat so that collagen in the bones has time to transform into gelatin. This broth is also rich in minerals, as bone marrow and fat release multiple delicious flavours. This soup has a silky texture and a cloudy color. Word paitan means “white soup”, in reference to broth cloudiness.
This is intentional, as fat is emulsified in broth, creating a rich, creamy mouthfeel. This ramen broth is very rich in flavor. It's easy to use by diluting with hot water or broth to your liking.
For ramen, use 1 part concentrated broth to 9 parts water or stock. For a richer simmered dish, 1 measure of concentrated broth should be diluted with 6 measures of water.
