Craftsman Kagura No Sato, produces his yuzu kosho exclusively from fruit grown in natural agriculture for over fifty years, and recently certified organic, and harvested in Shiromi, a small village surrounded by mountains reaching 1,000 metres above sea level.Thanks to the moderate amount of sunshine on the cultivation terraces, abundant alluvial waters of steep, rocky mountains, and thermal amplitudes between nights and days, these yuzus develop refreshing aromas and intense tangy flavours.Yuzus are picked when the weather cools and they are fully ripe. They are peeled by hand, fruit by fruit, and marinated with red chillies grown on our artisan's farm. Red chillies have absorbed e summer heat and become spicy.Salt content is kept to a minimum. Yuzu peel texture, aroma and taste harmonize with red pepper sweetness and spiciness to create a brightly colored yuzu pepper.
